Recipe - Sriracha Garlic Shrimp with Cauliflower Mash and Warm Kale Salad

Long time no see! I figured I would make my comeback with this delicious recipe for what I just whipped up for dinner.  If you are looking for something lighter than mashed potatoes, this cauliflower version will do the trick! This meal is so fast and easy! Honestly I hardly measure anything, it is just to taste. I used 1 head of cauliflower, 2 lb of shrimp, and 2 bunches of kale for 4 people. We went a little crazy on the amount of shrimp we each had so there would be enough for more people if you had a real serving size.




Califlower Mash
Grab a big sauce pan and sauté 3 cloves of minced garlic in the bottom with oil. Add 1 head of cauliflower that you cut into florets, 2 cups of broth (I use chicken or vegetable) and 1 cup of milk (I use almond milk). Let simmer for about 10-15 minutes. I then use a hand mixer to blend up the cauliflower mix so I don't have to transfer anything hot into a food processor. Blend until smooth. Add almond flour 1/4 cup at a time while mixing to thicken if needed. Add salt, garlic salt, pepper, and nutritional yeast to taste. (For those who don't know about nutritional yeast it is great for that creamy flavor when you are not using dairy)

Shrimp
This is easy. Seriously. I don't even measure anything with this. Just throw some chopped garlic in a pan with oil (I use coconut or avocado) and sauté for a few minutes. Then toss in the shrimp. Add some salt, chili powder, and sriracha seasoning powder. Stir around until cooked. Here is the trick, once the seasoning has started to dry to the pan add a splash of water or, my favorite is some lime juice, and mix while cooking down so it makes a thick coating for the shrimp. Done.

Kale
Toss some oil, garlic, and lemon juice into a pan with the kale and cook until it starts to darken. Just watch and make sure you don't overcook the kale.


There we go! Let me know if you try this and what your thoughts are! You can add different things to the cauliflower mash like milk ad butter if you are able to have those (I am not) and whatever normal things you add to mashed potatoes.
